Our Story

Every plate has a story.

From The Original Beef to The Bear.

The Bear began as The Original Beef of Chicagoland, a family-run sandwich shop that was as much about survival as it was about food. Mikey Berzatto, larger than life and deeply loved, carried the weight of that kitchen for years. The Beef was loud, messy, and raw — a neighborhood staple where regulars lined up for Italian beef sandwiches and a taste of home. When Mikey passed, he left behind more than just a restaurant. He left behind a legacy, a family, and a place that still mattered to the city around it.

Mikey Berzatto

Michael “Mikey” Berzatto was the heart and chaos of The Original Beef of Chicagoland. Larger than life, he ran the shop with grit, humor, and stubborn pride, keeping it alive through sheer will. To the neighborhood, Mikey was family — a guy who knew everyone and kept the line moving no matter what. To his own family, he was both anchor and storm. Though he’s gone, his spirit lives on in The Bear, where every sandwich, every service, carries a piece of what he built.

The Transformation.

When Carmy came back to Chicago after his brother Mikey’s death, he brought with him a lifetime of lessons from the world’s hardest kitchens. The task wasn’t just to save The Beef — it was to transform it. With Sydney at his side, and the crew who had once only known how to sling sandwiches, Carmy pushed everyone to learn, adapt, and evolve. From line cooks to trained chefs, the team grew into something bigger than they imagined. The Bear became both a tribute to Mikey and a reimagining of what a Chicago kitchen could be.

The Experience.

Carmy and Sydney approached the menu as a dialogue between past and future. Together, they crafted dishes that honored the comfort food roots of Chicago while introducing new flavors, techniques, and risks. The rest of the team rose to the challenge, finding their rhythm in the chaos, elevating each plate, and shaping a dining experience that’s both intimate and electric. The Bear is now more than a restaurant — it’s a must-dine destination where food, service, and story collide to create something unforgettable in the heart of the city.

The Bear has earned a reputation for one-of-a-kind dishes that surprise and delight, drawing critical acclaim and national attention. Critics call it one of Chicago’s most exciting restaurants, but the energy inside remains true to its roots. Some nights, guests may find themselves swept into an unexpected menu or a singular moment crafted by the kitchen. Yet through all the change, one tradition remains: the infamous Italian beef sandwich, still served through the window — a reminder of where it all began, and a promise that nothing good is ever truly left behind.
